How to Celebrate National Eat Your Vegetables Day

You try to incorporate more vegetables into your meals, and it's met with disgust, refusal and frustration. How can you get more veggies into your family's meals, and have your family enjoy the meals you spend heart, sweat and time putting together?

Here's one recipe that's a crowd favorite in our home. Lentils are a sneaky way to have a meatless meal, they have a great texture to replace meat, and they're also filling. The key is adding in lots of flavor with delicious spices and ingredients. Done right, everyone will be happy and satisfied - especially you, mama!

In celebration of National Eat Your Vegetables Day I’m sharing one of my favorite recipes, Vegetarian Lettuce Wraps.

Vegetarian Lettuce Wraps

Adapted from “All Recipes

Prep Time: 20 minutes

Ingredients

  • 16 butter lettuce leaves (or one head Romaine lettuce)

    1. 1/2 pound dried lentils

    2. 1 tablespoon cooking oil

    3. 1 large onion, chopped

    4. ¼ cup hoisin sauce

    5. 2 cloves fresh garlic, minced

    6. 1 tablespoon soy sauce

    7. 1 tablespoon rice wine vinegar

    8. 2 teaspoons minced pickled ginger

    9. Hot sauce to taste (optional)

    10. 1 bunch green onions, chopped

    11. 2 teaspoons sesame oil

Instructions

  • Cook lentils in an instant pot. Add 3 cups vegetable stock and 1/2 pound dried lentils to Instant Pot and cook on high pressure for 9 minutes. Drain any excess liquid when cooking is complete, and set aside.

  • Rinse whole lettuce leaves and gently pat dry. Set aside.

  • Add onion and cooking oil to pan and cook until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and hot sauce into onions. Add green onions, sesame oil, and lentils; cook and stir until the onions just begin to wilt, about 2 minutes.

  • Let each person assemble their own wraps, and enjoy!
